Seen floral arrangements w/real fruit in vase. is there a preservative used for this?

I've seen lovely flower arrangements with real fruit in the glass vase. How do you preserve the fruit that is covered with water? In particular I saw one with lemon slices in water and yellow roses in the vase.

I've seen those in our lobby but they never last long. Maybe they just go bad and there is no secret. Try nice looking plastic fruit?
Reply:H2O is the preservative, Im sure the dissolved oxygen levels in the water are very small, and oxygen is what what starts breaking them down. They dont last very long though.
